Chicken Adobo  

Ingredients
(Serves 4)

1 kg chicken pieces, cut up or whole
1 head of garlic, coarsely chopped (yes, an entire head!)
50 ml soy sauce (or more to taste)
5 ml ground black pepper
500 ml water
250 ml vinegar (rice vinegar or white wine vinegar work best)
2 bay leaves
25 ml cooking oil

Instructions

Place the chicken in a saucepan. Add vinegar, garlic, pepper, salt or toyo (soy sauce) and water. Cover the saucepan and cook slowly until the meat is tender and most of the broth has evaporated and only 1/4 cup remains.

Drain, separate the pieces of garlic from the pork and fry in oil until brown. Add the pieces of pork and fry until brown. Add the broth and let simmer about 5 minutes. Serve hot.

COOKING TIME: 45 mins to 1 hour

Pancit  
   

Ingredients
(serves 4-6)

1 tsp. Oil
¼ lb. Chicken, thin sliced or 2 Chinese sausage, thin sliced
¼ lb. Shrimp, shelled and deveined (optional)
2 cloves Garlic
1 small Onion, sliced
½ cup. carrots, slivered
2 cups cabbage, sliced.
½ cup mushrooms, sliced (optional)
1 cup. pea pods, slivered
½ tsp. salt
2-3 Tbsp. Soy sauce
1 can Chicken Broth
1 package Pancit or fresh Miki noodles+1 package of Saifun, soaked in warm water, drained,
1 Green Onion, cut 1" pieces

Instructions

1.) Heat pan on high and add oil.
2.) Add chicken, pork, shrimp and garlic; stir fry until meat is cooked.
3.) Add all vegetables, salt, soy sauce and chicken broth.
4.) Bring to a boil stirring in noodles until all ingredients are combined and hot.
5.) Garnish with green onions.

COOKING TIME: 45 mins to 1 hour

 
Menudo  
   

Ingredients

1 cup diced liver
2-1/2 cups diced potatoes
1/3 cup boiled garbanzos
3 medium-sized tomatoes
3 segments garlic, pounded
1 medium-sized onion, sliced
1/2 cup water in which pork was cooked
1/2 tsp. pimenton
Shortening
Salt to taste

Instructions

1.) Cook pork in water to cover until tender. Dice.

2.) Saute garlic, onion and tomatoes in shortening. Add pork and Liver and continue sauteing for 5 minutes. Add water and salt, and pimento (to color).

3.) Add potatoes and cooked garbanzos. Cook until potatoes are done.

COOKING TIME: 45 mins to 1 hour

 
Fried Lumpia  
   

Ingredients

1/2 cup chopped pork
1 cup chopped beef
1/2 cup chopped ham
1/2 cup boiled garbanzos or potatoes, cut into cubes
2 tomatoes (cut in to pieces)
1 onion (minced)
1/2 laurel leaf
3 cloves garlic (pounded)
2 eggs (hard boiled and cut into pieces)
1/2 cup water
1 teaspoon pimeaton
1 box raisins (small size)
Lumpia wrappers
Salt

Instructions

Saute garlic, onions, tomatoes. Whae light brown, add meat, lauel leaf, pimenton and water. Add salt to taste. Cover and simmer until meat is tender. When nearly cooked, add garbanzos and raisins. Before wrapping let it cool. Add haed-boiled eggs and wrap in lumpia wrapper. Fold two ends well. Fry until golden brouwn. Serve with garlic, vinegar, pepper and salt.

Lumpia sauce

Mix together 3 tablespoons cornstarch, 1/3 cup brown sugar, 1/4 cup soy sauce and 1-1/2 cups water. Strain if lumpy. 1 head garlic 1 tbsp.oil

Fry until brown, segments of macerated garlic. Remove the garlic. Into the heated fat pour slowly the sauce batter, stirring constantly until mixture thickens Top with fried garlic.
